After years of administration and management jobs straight out of college, Shirley began to rethink her career choice and donned her chef jacket to begin her cake-designing journey. She firstly earned a Professional Certificate in Baker and Pastry Cook Training from the Vocational Training Council of Hong Kong with the Best Performance Award. Having a background in bakery techniques, she started learning cake making and decoration as a hobby which is now her passion. Shirley has completed several professional certificate courses in Royal Icing and Sugar Flower in the UK and an Advanced Clay Art course In Taiwan.

Shirley has won a Bronze Prize of Professional Wedding Cake competition in HOFEX 2013, a Gold Award of "Class C: A Floral Arrangement" in ExCel London 2015 and a Silver Award of "Class N: Small Decorative Exhibit" in Cake International Birmingham 2017. She teaches cake decorating, clay art and is an accredited tutor for the PME Professional Diploma Course. She was awarded Honorary Five Star Sugar Artist Medal in 2019.

In this project, Shirley shows you how to make three fantastic sets of fondant characters. This is a Blossom Cakes Certificate Course for character modelling, covering just about the six most popular and useful fondant characters that are perfect for decorating occasion cakes or sugar exhibits. Starting from the basics to advanced levels are covered in the course. You will learn the essential sculpting techniques, and we will also pay special attention to facial expressions, body language, costumes and background in this course.

4/2 (Sat) - Lesson 1 - Monkey & Unicorn
11/2 (Sat) - Lesson 2 - Babies in costumes
18/2 & 25/2 (Sat) - Lesson 3 - Bride & Groom

* This course is suitable for any level, and you do not need any skills before attending this course as everything is explained.
* The course is four days, and the tuition fee is HK$4,800. You can also register for each lesson separately, with tuition fees HK$1,280 for 1-day class and HK$2,500 for 2-day class.
* If you signed up for the 4-day course, you are entitled to receive a Blossom Cakes certificate.

God of Longevity on Koi

This fabulous birthday cake features the God of Longevity, or Shou Xing Gong, holding a fishing rod with peach bait while riding on the back of a koi. In this workshop, you will learn to model each part that composes the figures of Shou Xing Gong, colourful Koi and Peaches. You will also learn to cover the cake with sugarpaste and embellish it with shapes. We will use a styrofoam dummy cake in the class so you can keep the creation for future reference.

La Vie en Rose is an attitude of trying to see beauty every day, like when you first fall in Love. Everything appears rosy and cheerful to the loved one who received this cake, and everything around her is a source of joy. This lovely cake is topped with a rice paper rose, and a 2D model of a gorgeous woman conveys charm, optimism and romance!
Learning outcomes:​

  • Coating dummy cake with sugarpaste

  • This class uses dummy cakes, so you will be able to keep the cake for reference​

Play some sweet tunes on this little beauty...it's the perfect cake for the musician. In this 3-day workshop, you will learn how to use essential Royal Icing techniques to pipe and construct a grand piano's details, including filigree pattern on the rim and lid, music rack, and pedals, and get the ebonies and ivories placed correctly. You will also learn how to pipe exquisite musical notes extension work that appears to float right off around the cake.​

*It is also a certified course of the PME Five Star Sugar Artist programme.  A registration fee of HK$3,500 is required for students who register for the PME Five-Star Sugar Artist Programme for the first time. Please read PME Five Star Sugar Artist page for more details.
