Wagashi refers to traditional Japanese sweets, with Nerikiri being one of the most popular and visually appealing types. This sweet is made from a blend of white bean paste and "Gyuhi" dough, which is then dyed in various colours and filled with stuffing. The dough is then kneaded into different designs using various tools and techniques.
Our class will focus on creating four unique autumn-themed Nerikiri designs, including Autumn Leave, Moon Rabbit, Fallen Leave and Autumn Cherry Blossom. The class will cover the process of making Nerikiri dough, colouring and stuffing techniques, the use of Wagashi tools, and tips for storing finished products. While the class will not involve making the Nerikiri, we will provide you with the recipe and concentrate on teaching key techniques such as stuffing, tool usage, and kneading. This course is ideal for beginners who have never made Wagashi before.
