PME Five Star Sugar Artist Programme

We are excited to introduce a groundbreaking recognition program for the sugar art industry. This program is designed for cake decorators who seek an educational challenge to improve their skills in creativity and design. It aims to develop, refine, and enhance their existing talents to achieve their ultimate goals.

The PME Five Star Sugar Artist Programme is an advanced course exclusively for students who have earned a PME Professional Diploma Masters Certification. The program awards five stars, each corresponding to a unique sugar artist skill representing the pinnacle of achievement in this field. These skills range from Royal Icing to Sugar Flowers, and students can expect to face rigorous testing that is unparalleled in the industry. Upon earning their first star, students are awarded a Medal crafted by designers appointed by Her Majesty the Queen of England. As students progress and earn additional stars, they can proudly display them on their medal. Upon earning their fifth star, students will be awarded the Final Certificate and will be able to call themselves a "PME Five Star Sugar Artist", the highest honour in the field. Students can wear their medals with all five stars on their chef's jackets, displaying their achievements with pride.

Undertaking the Five Star experience is a challenging yet fulfilling journey that demands personal development and self-discovery. As a skilled Cake Artist, you will encounter obstacles along the way but also pleasant surprises. Crafting each component from scratch is an achievement to take pride in, and you should boldly proclaim, 'I Made that'.

Our tutors, Peggy Wong and Shirley Kwan, have the distinguished honour of being the first 'Honorary PME Five Star Sugar Artists'. They are also the first approved instructors for the prestigious 'Five Star Sugar Artist' course. With their expert guidance, you can take the necessary steps to become part of the exclusive PME Five Star Sugar Artists group.

Basic Criteria

  • This course is designed for those students that have already completed their PME Masters Certificate

  • The PME Professional Diploma is the only qualifying entry into the PME Five Star Sugar Artist programme

  • Taught only by PME Approved Teachers at PME Approved Locations

  • All classes must be conducted under the guidance of the approved teachers, Peggy Wong and Shirley Kwan

The Five Stars

​Denote the five sugarcraft skills that showcase the work of a true Sugar Artist and can be completed in any order:

  • Rolled Fondant Dessert Table

  • Royal Icing and Piping

  • Sugar Flowers

  • Modelling

  • Sculpted Cakes

Registration

If you are a graduate of PME and are interested in registering for the Five Star Sugar Artist programme, please send an email to blossomcakeshk@gmail.com containing a personal photograph of yourself (preferably high-resolution) and a brief description. The information you provide will be forwarded to PME in London and may be used to verify your progress on the PME School website. Please ensure that the description you provide is in English. The registration fee for the program is HK$3,500.00 per student, which includes the course manual, certificate, medal, and your inclusion on the PME School website.

Upon enrollment, you will receive a course manual and be challenged to reach for the stars!

Authentication of Students Work

After completing the first star or each subsequent one, Blossom Cakes will send a photo of the final course piece to PME headquarters in the UK. The student's progress will be showcased on the PME School website. Upon completing the first star, the student will receive a PME Five Star Sugar Artist Medal and One Star. Additional stars will be granted by the PME Five Star teacher as they are achieved and verified. The PME Five Star Sugar Artist Certificate, signed by PME England, will only be awarded once all Five Stars have been earned.

We will notify PME in England of the student's accomplishments and star count as outlined in the course manual provided during registration. It is the student's responsibility to monitor their progress and ensure the teacher confirms that their work meets the project criteria in the course manual.

Learn the intricate and elegant cake-decorating technique of filigree icing in this 4-day workshop. In this workshop, you will learn how to control your pressure piping to create stunning panels with filigree work, overpiping, 3D butterfly and more. You will have the opportunity to assemble the piped pieces into a three-dimensional design after allowing them to dry. Additionally, you will learn how to pipe flat butterfly wings and complete them as a beautiful butterfly sitting on a branch. The techniques you learn in this class can be applied to design your original pieces. Once you understand how to pipe and build vital parts, there are many ways to incorporate filigree work into a cake.

The beauty, colour and style that sugar flowers can bring to a special celebration can be stunning! In this course, you'll learn to create life-like Peony, David Austin Rose, Sunflower, Lisianthus, Narcissus and foliage with gum paste. You will also learn the correct use of silicone veiner and tools to create delicate petals and leaves. And how to use gradient colouring to create colour blends and add light and shade to the flower.

Sweeten your party! Besides the host, the starts of many celebration receptions are the desserts. The dessert table, or a candy corner, has become very popular recently. A table with a stunning multi-tiered cake and an assortment of sweet treats will excite your guests and create an aesthetic Instagramable spot for the event.

 

Our PME Five-Star Sugar Artist - Rolled Fondant Dessert Table Course consists of a training workshop and a final project workshop (a tutor work alongside you on your project). The training workshop is a one-day training and consulting session. We will use the theme of Ladies' Night as an example and teach several practical skills, including bas relief sculpture, smocking pattern and quilling with fondant, and 3D wafer paper metallic waves. Our tutor will guide you in planning and designing the project to your desired theme. The final project workshop is a two-day session. The students will make and decorate dessert tables according to their designs. The tutor will work alongside and guide the students whenever needed. The course requires students to setup up a dessert table. Still, it must include a multi-tiered cake with a minimum of three tiers and at least three other decorated desserts, including cupcakes, macarons, mini cakes, cookies, cake pops, chocolates etc. A course aims to develop practical and creative skills in arranging a dessert table!

📌 The tuition fee includes materials for the hands-on training workshop only, and the materials for the final dessert table works are not inclusive.
📌 We have hundreds of moulds and tools available in our school, and students can bring their decorative fondant moulds and materials to create their dessert table or borrow our moulds and tools to decorate their works.​

This two-day workshop will teach you how to create this gravity-defying Dancing Owl cake and a vintage velvet armchair. Have fun learning the step-by-step method of constructing the main elevating structure, cake carving and covering the 3D cake with fondant. The head and body of the owl are a real cake!

A beautiful church steeple with stunning lighting effects. How pleased would the bride be to see this on their cake? In just four days, this workshop will teach you the skill of coating a cake with Royal Icing, how to control your pressure piping to create beautiful filigree panels, master overpiping skills to make various ornaments, and even how to create stained glass effects. You'll have the opportunity to assemble the piped pieces and lace collars into a unique three-dimensional design. Once you've learned these techniques, you can apply them to your original works and incorporate filigree into your cake designs in countless ways.

"Yo ho, yo ho! A pirate's life for me." Pirates of the Caribbean have been a source of fascination for many years. In this 3-day workshop, you will learn how to model each part that composes the Pirate Queen stepping on a treasure chest while holding a sword. You will also learn to cover the cake with sugarpaste and embellish it with a pirate symbol, skull and bones. We will use a styrofoam dummy cake in the class so you can keep the creation for future reference.

In this 3-day workshop, you will learn how to use essential Royal Icing techniques to pipe and construct a grand piano's details, including filigree pattern on the rim and lid, music rack, pedals, and get the ebonies and ivories placed correctly. You will also learn how to pipe exquisite musical notes extension work that appears to float right off around the cake.
