Hiroyuki Sanno Masterclass

This November, we are thrilled to welcome internationally renowned wagashi master Hiroyuki Sanno to Blossom Cakes for his highly anticipated debut masterclass in Hong Kong.
Hiroyuki Sanno, from Gifu Prefecture, is a highly regarded wagashi artisan and is recognised as one of Japan’s pioneering freelance wagashi professionals. Born in 1982 and raised in a family of traditional confectioners in Seto City, Aichi Prefecture, Sanno was immersed in Japanese wagashi culture from a young age. After graduating from high school, he underwent a rigorous six-year apprenticeship at a prestigious shop in Anjo City, Aichi, establishing a solid technical foundation. In 2007, he obtained his confectionery hygiene qualification and, from that year, served as factory manager at a major wagashi factory in Gifu for ten years, developing expertise in both large-scale production and artisanal precision.
Sanno frequently participated in national wagashi skill competitions and has received numerous honors over the years, including the Excellence Award at the “Meiwakai” (Confectionery Research Group) National Technical Contest, Silver and Gold Awards (the latter with overall championship) at the Japan National Confectionery Research Group Federation Technical Competition, as well as the Craft Excellence Award for his exhibit “Zuisho Saika” at the Ise Wagashi Expo.
Between 2016 and 2017, he was invited to hold wagashi workshops in France, Germany, and China, actively promoting Japanese confectionery culture overseas. In 2019, Sanno boldly transitioned to freelance practice, leveraging Instagram to build his brand and attracting over 60,000 followers. Iconic pieces like “Yoihanabi” (Evening Fireworks) and his mandarin nerikiri have gone viral across global social media and were featured on NHK WORLD-JAPAN. Highly respected for his signature tea towel shaping technique, Sanno continually innovates—infusing kohakutou with yoghurt and fruit flavours to enhance both sophistication and commercial value. His wagashi are primarily sold in limited quantities online and at local markets, often selling out instantly and earning the reputation of “phantom wagashi” among fans.
