Wagashi refers to traditional Japanese confections, with Nerikiri being one of the most beloved and visually captivating types. Nerikiri is made from a blend of white bean paste and “Gyuhi” (a soft, sweet, mochi-like dough), which forms the smooth outer dough. This dough is coloured in a variety of autumn hues, filled with sweet paste, and then shaped by hand—using special wagashi tools and techniques—into beautiful seasonal motifs.
In this class, we will create four types of autumn-themed Nerikiri wagashi—Autumn Leaf, Moon Rabbit, Fallen Leaf, and Autumn Cherry Blossom—with a total of six pieces. The workshop will include explanations of Nerikiri production, colouring and filling techniques, an introduction to wagashi tools, and tips for storing your finished sweets. To focus on practical skills such as filling, use of tools, and hand-shaping, the Nerikiri dough will be pre-made, but the recipe will be provided for you. This class is perfect for beginners with no prior experience making wagashi.
