After years of administration and management jobs straight out of college, Shirley began to rethink her career choice and donned her chef jacket to begin her cake-designing journey. She firstly earned a Professional Certificate in Baker and Pastry Cook Training from the Vocational Training Council of Hong Kong with the Best Performance Award. Having a background in bakery techniques, she started learning cake making and decoration as a hobby which is now her passion. Shirley has completed several professional certificate courses in Royal Icing and Sugar Flower in the UK and an Advanced Clay Art course In Taiwan.

Shirley has won a Bronze Prize of Professional Wedding Cake competition in HOFEX 2013, a Gold Award of "Class C: A Floral Arrangement" in ExCel London 2015 and a Silver Award of "Class N: Small Decorative Exhibit" in Cake International Birmingham 2017. She teaches cake decorating, clay art and is an accredited tutor for the PME Professional Diploma Course. She was awarded Honorary Five Star Sugar Artist Medal in 2019.

Caribbean Pirate Queen

 

"Yo ho, yo ho! A pirate's life for me." Pirates of the Caribbean have been a source of fascination for many years. In this 3-day workshop, you will learn how to model each part that composes the Pirate Queen stepping on a treasure chest while holding a sword. You will also learn to cover the cake with sugarpaste and embellish it with a pirate symbol, skull and bones. We will use a styrofoam dummy cake in the class so you can keep the creation for future reference.

Sugar Animals

 

Learn how to make five lovely animals in this 2-day class. We will create lion, elephant, piggy, Corgi and kitten with modelling paste. We will pay special attention to the animal faces and body language in this class. We will use fondant to create a lawn and stone walkway on a styrofoam cake board for the animals. A perfect topper for kids' cakes!

Grand Piano

 

Play some sweet tunes on this little beauty...it's the perfect cake for the musician. In this 3-day workshop, you will learn how to use essential Royal Icing techniques to pipe and construct a grand piano's details, including filigree pattern on the rim and lid, music rack, pedals, and get the ebonies and ivories placed correctly. You will also learn how to pipe exquisite musical notes extension work that appears to float right off around the cake.

This fabulous birthday cake features the God of Longevity, or Shou Xing Gong, holding a fishing rod with peach bait while riding on the back of a koi. In this workshop, you will learn to model each part that composes the figures of Shou Xing Gong, colourful Koi and Peaches. You will also learn to cover the cake with sugarpaste and embellish it with shapes. We will use a styrofoam dummy cake in the class so you can keep the creation for future reference.

Sugar Puppies

 

Learn how to make four adorable puppies in this 2-day class. We will create pug, poodle, beagle, and chihuahua with modelling paste. We will pay special attention to the puppy faces and body language in this class. We will also create a comfy sleeping mat for each puppy. Sugar puppies are great ideas for kids' cakes!

Rolled Fondant Dessert Table

 

Sweeten your party! Besides the host, the starts of many celebration receptions are the desserts. The dessert table, or a candy corner, has become very popular in recent years. A table with a stunning multi-tiered cake and an assortment of sweet treats will excite your guests and create an aesthetic Instagramable spot for the event.

 

Our PME Five-Star Sugar Artist - Rolled Fondant Dessert Table Course consists of a training workshop and a final project workshop (a tutor work alongside you on your project). The training workshop is a one-day training and consulting session. We will use the theme of Ladies' Night as an example and teach several practical skills, including bas relief sculpture, smocking pattern and quilling with fondant, and 3D wafer paper metallic waves. Our tutor will guide you in planning and designing the project to your desired theme. The final project workshop is a two-day session. The students will make and decorate dessert tables according to their designs. The tutor will work alongside and guide the students whenever needed. The course requires students to setup up a dessert table. Still, it must include a multi-tiered cake with a minimum of three tiers and at least three other decorated desserts, including cupcakes, macarons, mini cakes, cookies, cake pops, chocolates etc. A course aims to develop practical and creative skills in arranging a dessert table!

Perhaps the classes don't fit your schedule. Or maybe you want to learn something specific. Private classes are an excellent option. The advantage of this option is intensive or partial days and flexible hours. We can even help to suggest a project if you only have some ideas in your mind.
