Wei Shih-Chieh Masterclass

This September, we are honoured to welcome award-winning jam painting artist Mr. Wei Shih-Chieh from Taiwan to Blossom Cakes for an exclusive 2-day hands-on masterclass in Hong Kong.
Wei Shih-Chieh is a distinguished culinary artist from Taiwan with over two decades of experience in the culinary arts. His expertise spans fruit and vegetable carving, dough modelling, fondant sculpture, and jam painting — a unique plating technique that showcases the harmony between visual aesthetics and culinary expression. With a versatile background in Taiwanese cuisine, Cantonese banquets, Japanese dishes, street food, and global flavours, Wei brings both technical mastery and a broad creative vision to his work.
He served as head chef in both Taiwanese and Cantonese cuisine for over ten years each, gaining extensive hands-on knowledge in professional kitchens. In addition to his culinary career, Wei has been an educator for more than 12 years. He is currently an Assistant Professor-Level Technical Instructor at JinWen University of Science and Technology. He has also taught at Ku Pao Home Economics & Commercial High School and City University of Science and Technology. His teaching has nurtured a new generation of culinary talents in Taiwan and beyond.
Wei has received numerous international accolades. He won gold medals in vegetable carving at the 2009 Asian Cup in Bangkok, the 2010 Culinary World Cup in Luxembourg, and the 2012 IKA Culinary Olympics in Germany. In 2024, he returned to the Culinary Olympics. He earned a silver medal in fruit carving, a bronze medal in fondant modelling, and a bronze medal in jam painting, showcasing his versatility and earning global recognition.
His jam painting artworks are known for their vibrant colour layers and meticulous composition, blending Eastern knife techniques with Western plating aesthetics. In class, Wei emphasises the integration of science and art, offering a systematic approach to ingredient selection, colour theory, and plate structure. His hands-on demonstrations and step-by-step guidance help students quickly master essential skills while fostering creativity.
This upcoming Hong Kong course, themed “Jam Painting × Cultural Storytelling”, invites participants to use local fruits to create visually and emotionally resonant edible art. Wei will also share his insights on preparing for international competitions, empowering students to reach new heights in their culinary journey.

🍓 What is Jam Painting?
Jam painting is a unique form of edible art that uses fruit jam as its medium. It combines the artistry of painting with the elegance of food presentation — often seen in dessert plating, gourmet photography, and high-end culinary design.
This class is perfect for chefs, confectioners, bakers, food stylists, and even beginners who wish to explore a new artistic expression in food.
Day 1: Foundations & Practice Artworks
🔸 Introduction to jam painting materials
🔸 Overview of fundamental gestures and techniques for jam painting
🔸 Techniques for squeezing jam and methods to prevent “jam overflow”
🔸 Plate preparation and oil film removal
🔸 Linework practice using jam
🔸 Techniques for finger-smearing colours
🔸 Completion of 5 to 7 artworks, such as Cherries, Shrimp, Plum Blossoms, Morning Glories, Koi Fish, etc.
Day 2: Advanced Works & Live Demonstration
🔸 Mastering composition proportions and layout techniques
🔸 Techniques for jam layering and colour blending
🔸 Creation of two advanced works: Peony and Jiangnan Scenery
🔸 Live demo by Master Wei: featuring a bird-themed creation

Each participant will receive a 21-colour jam set and 60 nozzles for jam painting (total value HK$520).
💬 Can I join if I have no painting experience?
Absolutely! Master Wei will guide you step by step from the basics. No prior painting or culinary experience is required.
This is Wei’s first public workshop in Hong Kong. If you are in the hospitality or culinary industry, mastering jam painting will enhance the visual appeal of your desserts, infuse creative flair, and boost your career development!
